Here is the scenario. My better half requests cake at 11 pm on a Saturday night. All stores and restaurants are closed within a 30 mile radius. The upside is that there is a ripe Mango in the refrigerator and the kitchen is stocked with the basics, so making a cake is definitely an option. The downside is that it’s getting late and I need to get busy. After reflecting on my upside (and down)… it doesn’t take a rocket scientist to guess where I’m going with this…I’m on it. Usually made with pineapple, this cake is simple yet satisfying and can easily be made in a cast iron skillet with any type of fruit. Somebody stop me….

Pineapple upside down cake is my ULTIMATE comfort food! Upside-down? Yes.…for those near and dear, you know how apropos for the hustling, bustling, and struggling this holiday season I seem to be experiencing on many, many levels.
A little vignette to share. I ran into my local Wal-Mart at this morning for some Excedrin and had my check-out line position challenged by a trailer-park version of Mrs. Clause wearing Snoopy pajama bottoms. (It was only 7:30 am after all). I relinquished the spot after spying the skull-and-bones tatty behind her right ear.
I think this holiday I will hold a wassail…
The historical purpose of wassailing was to awaken the cider apple trees and to scare away evil spirits to ensure a good harvest of fruit in the Autumn, and Lord knows I’ve see a few evil spirits this week. Here is a menu of hors d’oeuvres I will serve. Date TBA:
