Summer is a state of mind. Although a roast chicken is on deck and the talking meatheads of football are on the tube, I haven’t put the blender away just yet. There is no way to fully remove the threat of Monday from invading my Sunday but roasting a chicken is a good defense. A backfield of sliced onions(4), carrots, olive oil and herbs keep the upside-down bird company in a hot oven(450°) for the first quarter. Flip it for the second quarter(425°) and let it play out the second half(350)°. The onions are key players. Summer is not over, time to go poolside.
