Chili 1

There ain’t nothing wrong with a basic Tex-Mex chili.  But what’s going on here says adios to the lone star and hola to flavor.  Various chilis, fresh peppers, onions and garlic make up the base for the pork to braise in.  These pan-roasted morsels are pureed and returned to the pot with chicken stock and chunks of pork.  Nothing left to do but brace myself for the explosion of flavor coming my way.
