Not your run-of-the-mill Easter dinner!  Flank steak stuffed with broccoli rabe, pine nuts, pecorino-romano cheese and garlic.  The surrounding root vegetables were carrots and parsnips with some scattered shallots.  Hope I didn’t scare the family with this alien roast.  It was alright though, I got a few laughs with a conventional shrimp and artichoke casserole with olives and sun-dried tomatoes in a lemon beurre blanc.  Got to have a sense of humor during this holiday weekend.  I could have used my matzo balls and made pork!

    Come to think of it, that shrimp and artichoke casserole sounds kinda’ familar too…

      …that’s because my dinner was inspired by my memory of Christmas Dinner at the Lucich house…

        Add in an eggplant parmesan, stuffed shells and some stuffed mushrooms and you’ld have a meal!!!

    “Speechless” is not often a word used to describe me, but this latest offering got me tongue-tied. Is there no end to that cavern of creativity? Wow.
