soba-minded

Six months into this adventure of mine and my brain is craving soba noodles, edamame and fish.  Now I’m no genius but this combo seems like a smart choice for body and soul.  The cold soba (buckwheat) noodles are relatively gluten-free (whatever that means) and the fish is a smokey soy-glazed Tilapia filet.  Edamame are young soy beans-they have to be good for you.  This is all put together with a citrusy Ponzu sauce and topped with black and white sesame seeds.  And washed down with an ice-cold frozen mango margarita...just kidding.
